Lemon Pepper Asparagus Wrapped in Mahón and Serrano
4 oz Mahón cheese, shredded
2 pkg (3 oz each) Campofrio Jamón Serrano
12 asparagus spears, trimmed and blanched
1 tbsp olive oil
2 tbsp butter
1 tbsp lemon juice
1/2 tsp cracked pepper
Be sure to pick up the thicker asparagus, which works nicely in this recipe.
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Sprinkle cheese evenly over center of 12 slices of ham. Place asparagus spear over top; wrap tightly to enclose cheese. Repeat with remaining asparagus and ham.
Heat oil in large nonstick skillet set over medium heat; cook asparagus rolls, in two batches, for about 5 minutes or until ham is golden and cheese is melted. Transfer to serving dish.
Remove skillet from heat; add butter, swirling until butter melts. Stir in lemon juice and pepper; drizzle over asparagus.
Tip: Add 1/4 tsp hot chili flakes to pan sauce for an extra kick.
