Zesty Shrimp & Chorizo Tapas


1 tbsp olive oil

1 pkg (4 oz) Campofrio Sliced Chorizo
1 large onion, thinly sliced
2 cloves garlic, minced
4 tsp smoked paprika
1/2 tsp hot pepper flakes
1/4 tsp each salt and pepper
1 cup tomato sauce
1 1/2 lb medium raw shrimp, peeled and deveined
2 tbsp chopped fresh parsley
Crusty bread
Lemon wedges


Prep Time: 10 minutes

Cook Time: 25 minutes

Serves: 8

Heat oil in large skillet set over medium-high heat; cook chorizo for 3 to 5 minutes or until starting to crisp and brown around edges. Add onion; cook, stirring occasionally, for about 5 minutes or until softened and light golden brown.

Add garlic, paprika, hot pepper flakes, salt and pepper; cook, stirring, for 1 minute. Add tomato sauce and simmer for about 10 minutes or until slightly thickened.

Add shrimp; cook for about 5 minutes or until pink and cooked through. Sprinkle with parsley. Serve with bread and lemon wedges.
