But replace that pimentón with white pepper and aromatic spices, and you get a very different flavor—one that’s delicate and enjoyably light, without any heat. Our salchichón is dry-cured in the traditional way, with natural, slow aging that’s never heat treated. This helps the sausage retain its traditional flavor—one that’s lighter and creamier than chorizo.
