Goat Cheese-Stuffed Dates Wrapped in Jamón Serrano


4 tbsp goat cheese, softened

1 tbsp each chopped fresh chives and parsley

1/4 tsp freshly ground pepper

12 whole Medjool dates, pitted

12 slices Campofrio Jamón Serrano


Mix together goat cheese, chives, parsley and pepper. Cut a lengthwise slit in each date; stuff each with 1 tsp of the goat cheese mixture.


Slice each piece of jamón in half lengthwise. Stack slices. Wrap each date with 2 pieces of jamón; secure each with a toothpick.
