Blue Cheese Stuffed Figs
- 3 figs (semi-ripe)
- 3 slices of serrano ham
- Blue cheese
- Arugula (1 handful)
- Balsamic vinegar
- Cut a vertical slit into the side of each fig, taking care not to cut all the way through.
- Stuff each fig with blue cheese.
- Fold each slice of serrano ham in half lengthwise and wrap around the top ¾ of the fig.
- Bake for 12 minutes at 400 degrees F until soft.
- Serve with arugula dressed with balsamic vinegar.
