Tomato Salad With Chorizo
1 lb Campari or cocktail tomatoes, quartered
1/4 cup olive oil
2 tbsp balsamic vinegar
1 clove garlic, thinly sliced
1/4 tsp each salt and pepper
1 pkg (4 oz) diced Campofrio Chorizo
1/2 cup whole pitted green olives
1/2 cup sliced roasted red peppers
2 green onions, thinly sliced
6 cups arugula
Prep Time: 10 minutes
Cook Time: 0 minutes
Toss together tomatoes, olive oil, vinegar, garlic, salt and pepper. Stir in chorizo, olives, roasted red peppers and green onions. Let stand for 10 minutes.
Place arugula on large platter. Spoon salad over top.
Tip: Serve salad with slices of baguette if desired.
