Spanish Tapas Skewers
Ingredients:
1 tbsp extra-virgin olive oil
1 tbsp red wine vinegar
1/2 tsp finely grated orange zest
1/4 tsp hot pepper flakes
Pinch each salt and pepper
12 anchovies
12 cherry tomatoes
12 pitted green olives
1 pkg (6 oz) Campofrio Tapas Variety Pack
12 small wooden or bamboo skewers

In bowl, whisk together olive oil, vinegar, orange zest, hot pepper flakes, salt and pepper. Add anchovies, tomatoes and olives; toss to coat well.
Thread 1 anchovy, 1 tomato, 1 olive and piece of tapas variety meat onto each skewer.
